The Italian Cuisine

The Italian cuisine is one of the most interesting and simple cuisines in the world and is appreciated by just about everyone, young and old, Italians and non-Italians.  Italian cuisine has developed through centuries of social and political changes, with roots as far back as the 4th century BC. Italian cuisine has its origins in Etruscan , ancient Greek , and ancient Roman cuisines. Significant changes occurred with the discovery of the New World and the introduction of potatoes, tomatoes , bell peppers and maize, now central to the cuisine but not introduced in quantity until the 18th century. The cuisine of Italy is noted for its regional diversity,
abundance of difference in taste, and is known to be one of the most popular in the world, with influences abroad.

Italian Pasta Recipes: All Italians love pasta and they practically eat it every day. Many times they eat it twice a day, for lunch and breakfast. The reason for this love is because Italians have created such a large variety of pasta shapes that can be accompanied by a very wide variety of sauces and condiments that can literally satisfy the desires of everyone in the family. Of course Spaghetti by far may be the most popular pasta cut, but many others are quickly catching up. Lasagna, Ravioli, Rigatoni, Tortellini are just a few that should be mentioned.

FOOD HISTORY
Italian cuisine is food typical from Italy. It has developed through centuries of social and economic changes, with roots stretching to antiquity.
Significant changes occurred with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers, maize and sugar beet, this last introduced in quantity in the 18th century. Italian cuisine is known for its regional diversity, especially between the north and the south of the Italian peninsula. It offers an abundance of taste, and is one of the most popular and copied in the world. It influenced several cuisines around the world chiefly that of the United States.
Italian cuisine is characterized by its simplicity, with many dishes having only two to four main ingredients. Many dishes that were once regional, have proliferated with variations throughout the country.
Pasta, vegetables, olive oil and fish are a major part of the Italian cuisine. Italian cuisine is probably the most important expression of the mediterreanean diet. Traditionally, meals in Italy usually contain four or five courses. Especially on weekends, meals are often seen as a time to spend with family and friends rather than simply for sustenance; thus, meals tend to be longer than in other cultures. During holidays such as Christmas and New Year's Eve, feasts can last for hours.
Today, the traditional Italian menu is kept mainly for special events (such as weddings) while an everyday menu includes only the first and/or second course, the side dish , and coffee. A notable aspect of Italian meals is that the primo or first course is usually a  more filling dish such as risotto or pasta. Italian cuisine also includes single courses (all-in-one courses), providing carbohydrates and proteins at the same time (e.g. pasta and legumes).
Some well know Italian dishes range from ranging from focaccia bread to a luscious tiramisu, pasta caborena. Not to forget the Margherita pizzza, mushroom risotto, bruschetta and caprese salad wiht pesto sauce that's Italian-  Mangia Mangia!!

American Cuisine NOW

THE AMERICAN CUISINE

New American cuisine , also known as Modern American cuisine, or Contemporary American cuisine, is a term referring to the wave of modernized cooking predominantly served at upscale fine dining restaurants in the United States, originating in the 1980s. New American cuisine is generally a type of fusion cuisine which assimilates flavors from the melting pot of traditional American cooking techniques mixed with foreign and sometimes molecular gastronomy components.
New American cuisine features innovative use of seasoning and sauces. Originally based on French ,
Nouvelle , and United States cuisine, New American has since progressed to include elements of Asian, Latin American, Mediterranean , and other cuisines.

FOOD HISTORY

The cuisine of the United States reflects its history. The European colonization of the Americas yielded the introduction of a number of ingredients and cooking styles to the latter. The various styles continued expanding well into the 19th and 20th centuries, proportional to the influx of immigrants from many different nations; such influx developed a rich diversity in food preparation throughout the country.  Early Native Americans utilized a number of cooking methods in early American Cuisine that have been blended with early European cooking methods to form the basis of American Cuisine. When the colonists came to the colonies, they farmed animals for clothing and meat in a similar fashion to what they had done in Europe. They had cuisine similar to their previous British cuisine .

When most of us think about the rich culinary traditions of the world, Italian, French, Mexican and Chinese often come to mind, but I think we Americans can hold our heads high as well. While we may not have quite the diversity of food that some other cultures have, American cuisine should make us all proud.

French Cuisine -- C' est delicieux

FRENCH CUISINE

The French are well known for their distinguished palates and has developed over centuries to become known as the most refined style of cooking in the world.
However, it wasn't until sometime after World War I that French cuisine became what it is known as today. Known as "haute cuisine", it has become an art form, and great care is taken in the preparation and presentation of French dishes. The French are well known for their distinguished palates.

FOOD HISTORY

French wines are usually made to accompany French cuisine.
French cuisine consists of the cooking traditions and practices from France. In the 14th century Guillaume Tirel, a court chef known as "Taillevent", wrote Le Viandier , one of the earliest recipe collections of medieval France . During that time, French cuisine was heavily influenced by Italian cuisine . In the 17th century, chefs François Pierre La Varenne and Marie-Antoine Carême spearheaded movements that shifted French cooking away from its foreign influences and developed France's own indigenous style. Cheese and wine are a major part of the cuisine. They play different roles regionally and nationally, with many variations and appellation d'origine contrôlée (AOC) (regulated appellation) laws.French cuisine was codified in the 20th century byAuguste Escoffier to become the modern haute cuisine ; Escoffier, however, left out much of the local culinary character to be found in the regions of France and was considered difficult to execute by home cooks. Gastro-tourism and the Guide Michelin helped to acquaint people with the rich bourgeois and peasant cuisine of the French countryside starting in the 20th century.
Gascon cuisine has also had great influence over the cuisine in the southwest of France. Many dishes that were once regional have proliferated in variations across the country. Knowledge of French cooking has contributed significantly to Western cuisines. Its criteria are used widely in Western cookery school boards and culinary education

NATIONAL CUISINE:
There are many dishes that are considered part of French national cuisine today.
A meal often consists of three courses, hors d'œuvre orentrée (introductory course, sometimes soup), plat principal (main course), fromage (cheese course) or dessert , sometimes with a salad offered before the cheese or dessert.
Some french food to consider Franche-Comté . Amongst savorous specialties accounted in the Cuisine franc-comtoise from the Franche-Comté region are Croûte aux morilles , Poulet à la Comtoise , trout , smoked meats and cheeses such as Mont d'Or , Comté and Morbier which are at the palate best eaten hot or cold, the exquisite Coq au vin jaune and the special dessert gâteau de ménage .. Breakfast: Café with a croissant for breakfastLe petit déjeuner (breakfast) is traditionally a quick meal consisting of tartines (slices) of French bread with butter and honey or jam (sometimes brioche ), along with café au lait (also called "café crème"), or black coffee, or tea[14] and rarely hot chicory.  Beyond French wine and cheese is a mixture of traditionally peasant and bourgeois French dishes , many which come with long histories, regional variations and modern adaptions. From simple, traditional French recipes to complex French dishes, it's not difficult to find a top French food to suit your taste.
